Using the Case Study Method for Instruction in the Design and Development of Foodservice Facilities

Abstract

The author illustrates the case study approach to teaching foodservice facilities design and development. The method outlined includes incorporating principles of marketing, financial management, space planning, technical drawing, and interior design. The case study method has shown to be an effective method of teaching principles of foodservice design and development.
