Abstract
The restaurant simulation is an opportunity for the hospitality student to assume the decision-making responsibilities of a restaurant manager while still being in the safe confines of the classroom. In this simulated management experience, the student makes various operational decisions including menu selection, pricing, scheduling, and marketing decisions. Based on these decisions a profit & loss statement is generated. By reviewing the P & L statements students see first hand the impact of their decisions on the profitability of their restaurant.
