Summary
A modification of Harrison's diphenylamine method for fructose or inulin determination is described, heating being carried out at 75°C for 60 minutes. With this procedure the ratio of fructose to glucose color production is 64, as compared with a ratio of 8 at 100°C for 30 minutes. Inulin hydrolysis is complete, the standard error of the method is less than 1 percent, the color is light stable and the low color production by glucose permits one to omit fermentation except in the presence of unusual glucose fluctuations.
