Summary
Cultures of certain acetic acid bacteria from “ropy” beer, when grown with dextrin but not when grown with other common carbohydrates, produce abundant amounts of polysaccharide material which has serological properties like those of the dextran which is produced from sucrose by Leuconostoc mesenteroides. A cell-free enzyme system, capable of causing the conversion of dextrin to material serologically like dextran, has been obtained from one of the cultures.
