Summary
By use of an amino-acid mixture simulating zein, it was found that chick-pellagra symptoms in chicks caused by the feeding of zein were due to the cumulative action of the amino-acid constituents of this protein. Glutamic acid, leucine, alanine, proline, and phenylalanine, the amino acids occurring in greatest amounts, seem to be principally involved in this connection.
