Summary
Lipoxidase appears to catalyze both the primary and secondary phases of fat autoxidation; in the primary phase carotene behaved as a pro-oxidant. Distinction must be made between inhibitors of enzyme action and the accepted inhibitors of the autoxidation of fats. A study of the effects of the former suggests that the enzyme is rather a dehydrogenase unless it is of multiple nature.
