Summary
Acetylation of the free amino groups of pepsin does not affect the hydrolysis of the peptide carbobenzoxy 1-glutamyl 1-tyrosine. Further acetylation decreases the activity towards this substrate. Acid hydrolysis of 0-acetyl, leaving N-acetyl groups intact, restores the activity of the enzyme to its former value.
