Summary
The growth of Str. cremoris, strain 972, is inhibited by a purified preparation of the enzyme lactoperoxidase under aerobic conditions. Lactoperoxidase does not inhibit the organism anaerobically. The inhibitory activity of lactoperoxidase can be reversed by catalase or horse-radish peroxidase. The inhibitory activity is not the result of oxidation of low molecular weight substances. The mechanism of the inhibition of growth by lactoperoxidase is discussed.
