From prehistoric times fungi gathered in the wild have been an important part of man's diet. The cultivation of mushrooms, almost entirely Agaricus spp. is, however, of comparatively recent origin. Today this industry produces well over a million tonnes of mushrooms annually and they have become an everyday vegetable rather than a luxury food. In some parts of the world, the cultivation of other fungal species has been established.
