Fungal organisms developing in grain in store lead to hot spots and increased moisture content. Uncontrolled, deterioration is rapid, resulting in loss of viability in grain for seed, and off-flavours which render it unfit for milling and malting. Under certain conditions substances may be produced which are toxic to man and animals. Good grain storage depends upon regular sampling for moisture content, temperature monitoring, and the ability to aerate if temperature rises occur.
