The 1960s have been prophetically described as the decade of the economist rather than that of the politician or producer; certainly in the affluent, well-fed societies of the West much more attention must be given to the interaction of supply and demand in situations in which one foodstuff can be substituted for another. The position is well illustrated in the development of the broiler-chicken industry in recent years in the U.S.A. and in Great Britain.
