Abstract
The Institutional Foodservice Manufacturers As sociation ascertained at its 13th Annual Sales Conference held in May at the Conrad Hilton Hotel in Chicago that among the 700 industry representatives present the most crucial need of today is for qualified employees. There is, a panel of leaders pointed out, "a most urgent requirement for manufacturers to supply opera tors with products that are both easily used and enable strict cost control.... manufacturers can best assist by developing products that are 'people-free' — that eliminate all, or part of, on- premise preparation." Convenience meat, precut and portion-controlled, was cited as an example of a product that eliminates a major portion of on-premise preparation requiring skilled work ers. — Editor
