Abstract
Mr. J. Willard Marriott, Jr., president of Mar riott-Hot Shoppes, outlines top management's viewpoint of the food service industry in his article on pages 12 to 16 of this magazine. His company maintains at its Bethesda, Maryland, headquarters an Architectural and Engineering Department, headed by a corporate vice presi dent. This department is responsible for the architectural design and the construction super vision of the company's operating units. Archi tectural Design is divided into several sections: Project Architects and their draftsmen; Mechan ical Design; Interior Design; and Kitchen De sign. This article by John Cini, who heads up the company's Kitchen Design section, describes the careful advance planning which goes into the construction of a new operating unit.— Editor.
